Aside from a smattering of extra dialogue involving them, you don't miss anything. Too funny to not have Yuffie in the party, at least. Love it when she refers to Tifa as "boobs" lmao

You don't get the sidequest for Vincent's ultimate weapon (obviously), but I'm not sure about the Wutai sidequest (been years since I touched FF7) I think it's safe to assume that you need Yuffie in party to trigger it though.

Yes, but there's also a missable sidequest in Wutai as well.

Actually, I believe Wutai is completely optional.

Yup, Wutai is completely optional. If you do go there without having recruited Yuffie yet, the stolen materia side-quest won't occur. You also won't be able to do the Pagoda side-quest.
