I don't know about interviews but I can tell you this:

The FFX HD soundtrack is fucking beautiful. And from what I heard from some of the FFX-2 soundtracks (not all is in the HD OST), it is just a boost in quality.
What other FFX tracks weren't rearranged? Like Otherworld?
I don't know any exact names but they said over 60 when there's about 93 tracks for X.

Anyone got some good details/interviews about it?

All I've found is this: http://www.polygon.com/2014/3/18/5498016/final-fantasy-10-hd-remastered-soundtrack

I'm looking for details like why the other X tracks weren't rearranged and the entire X-2 soundtrack and if they at least got a boost in quality or something.
Unlike the KH remasters, FFX's rearrangements were composed using a better synthesizer, and not using real instruments. For certain tracks like the hymns and the cloister theme, I guess they just didn't see any reason to update them. X-2's soundtrack was originally very compressed on the PS2 (like FFXII's OST), so they just decided to use the CD version, more than likely just because FFX was the focal point of the release, and there is enough difference between the PS2 and OST version to not call for rearrangements.
